The Triple Decker

I am not thinking this picture is showing off the three slices of bread, but that is what this Triple Decker sandwich has. Does it make a difference? I say, YES!

I used Pepperidge Farm Very Thin 100% whole wheat. If I were packing lunch for my boys, I would probably do a regular bread, but since this sandwich was for my girls, I went very thin.

The Triple Decker

3 slices of bread
(and then you choose), I used:
sliced turkey
cheese
turkey bacon
lettuce
tomato
mayo
mustard

Layer it up, wrap it up, and pack it! (because you don't really need directions on how to put it together, do you?)

Jalapeño Popper Sandwich


I am so excited to share this tastey sandwich. Obviously this one might not be for the young ones but the cream cheese tames the jalapeño so it's not too spicey for my family. And the bacon... oh the bacon. The moderation... why do we have to moderate? Using light cream cheese and only 2 slices of bacon makes this sandwich come in at 8 grams of fat and 190 calories. On days like this, the rest of the space in the lunch box is filled with fruits and veggies only.



Jalapeño Popper Sandwich

  • 8 oz light spreadable cream cheese
  • Jalapeño, 3-4 to taste, canned or roasted, diced
  •  bacon
  • whole wheat bagel thin
Make the cream cheese spread in advance by dicing jalapeño's and stirring into cream cheese and returning the mix to the cream cheese container and returning to the refridgerator. This will make enough jalapeño cream cheese for about 8 sandwiches. Per sandwich, spread about 2 Tablespoons cream cheese mix on bagel, top with 2 slices of bacon, top and wrap to send off to lunch.

Bacon & Boiled Egg Sandwich


This sandwich makes me speechless. I don't know what to say other than, bacon and boiled egg? It had to be done.


Bacon & Boiled Egg Sandwich
makes 1

  • 2 boiled eggs (or 1 egg plus 1 egg white)
  • 2 t. mayo (I always use light)
  • 1/4 t. bacon salt
  • 1 T. bacon crumbles (you choose- turkey bacon, veggie bacon or regular)
  • 2 slices bread
Crumble eggs with a fork and add mayo, bacon salt and bacon. Place between 2 slices of bread.

Be prepared for your kids to come home and say, "My friend was wondering if you would make them a sandwich tomorrow."

It really happens. Especially after a sandwich like this.

Seafood Salad on a Bun


This is a very flavorful sandwich and can be tailored to you or your child's taste. Below I will list what ingredients would work in this recipe and you can easily add or double or take away to your taste. This makes plenty! I enjoy serving the salad on a hot dog bun but any bread would work great too.


Seafood Salad on a Bun
  • 8 oz. imitation crab legs
  • 4 hard boiled eggs
  • 1/2 cucumber
  • 1 avocado
  • 1 small can of sliced olives
  • 1/2 red onion
  • 2 T. capers
  • 4 slices of bacon
  • 1/3 cup mayo
  • lettuce
  • hot dog bun
Combine chosen ingredients and toss with mayo. Add to bun with a little lettuce.

BLT Salad Sandwich


It just like a Chicken Salad or a Egg Salad Sandwich, except it's inspired by the King of Sandwiches. The BLT. It goes without saying, you can't go wrong with bacon. (so why did I feel the need to say it?)

BLT Salad Sandwich
makes 2

  • 2 slices bacon (turkey, fake, reg'lar, the choice is yours)
  • a cup of lettuce
  • 4-5 grape or cherry tomatoes, quartered
  • 1 heaping tablespoon Mayo (I use Dukes Light)
  • Bread (I used a whole wheat hamburger bun)
Cook bacon until crisp. Crumble into bite sized pieces and let cool. Toss a cup of lettuce with tomatoes and mayonnaise. Add bacon. Add to bread and then write a list of chores for your children because when they get home from school, they are going to feel they owe you for this treat.
