Post Thanksgiving Wrap

What kind of Monday lunch box would be without a little Thanksgiving leftovers?

(a bummer of a lunch box, I say!)

I used Flat Out bread for this but a large tortilla would work. Flat Out bread is less likely to get soggy though, so it's one of our favorites and works great with the cranberry sauce.

Post Thanksgiving Wrap
  • Flat Out flatbread
  • left over turkey
  • left over cranberry sauce
  • provolone cheese
  • baby spinach
Layer each ingredient on Flat Out bread and roll.

Mini BBQ Sammies

Saturday me and my family and my siblings and their families went to my parents house for a big Family Dinner. I brought Boneless BBQ Ribs because my Dad is a fan. 

Today the left overs made for a delicious sandwich.

Mini BBQ Sammies 
  • Boneless BBQ pork ribs
  • Bread and Butter Pickles
  • spreadable butter
  • dinner rolls
Chop left over ribs and warm. Spread a scant amount of butter on the rolls, just enough to protect the rolls from getting soggy (assuming the sandwich is going into a lunch box for later). Add meat and pickle.

Mini Chicken and Spinach Quesadilla Roll Ups

These are so delicious that I made an extra for my breakfast.
This Roll Up has a spicy kick that will wake up your child's taste buds.
Mini Chicken and Spinach Quesadilla Roll Ups
  • Grilled chicken, chopped
  • Chipotle Mayonnaise
  • Quesadilla Cheese (or any shredded cheese you think fits)
  • Fresh baby spinach
  • fajita sized tortilla (I used whole wheat)
Spread Chipotle Mayo on tortilla, add cheese, spinach and chicken. Roll up and wrap and it's ready to go. Kraft makes Chipotle Mayonnaise or you can make your own.

Bobby Flay's recipe is:

Chipotle Mayonnaise
  • 1 cup Mayonnaise
  • 2 chipotles in abodo sauce
  • 1 T. abodo sauce
  • juice from half a lime
  • salt and pepper

Grilled Lime Chicken Snackers

Leftovers.......My, what nice lunch possibilities they make.
Last night we had Rice Bowls with Lime Chicken for dinner and I had leftover dinner rolls in the freezer from weeks ago that I saved for such a occasion. The leftovers made for tasty Snackers the following day.

Grilled Lime Chicken Snackers
  • Grilled Chicken, cubed & tossed in fresh lime juice
  • Lettuce
  • Mayo, or favorite sandwich spread
  • Dinner rolls
If this was my lunch, I would have added cilantro and black beans (yes, beans...) to the sandwich. I would like to brag about my children's sophisticated palates, and I certainly added cilantro and black beans to the table for the Rice Bowls last night but cilantro is a love or hate herb and my kids don't love it. And if I had added beans to their sandwich, my name would be mud.

A PB, CC & Strawberry Bagel Sandwich

This is my kids favorite sandwich at the moment. I hear tell after some lunch room sharing, some of their friends are making this at home.

Peanut Butter, Cream Cheese and Strawberry Bagel
  • Bagel (I used bagel thins)
  • Cream Cheese
  • Nut butter (I used peanut butter)
  • Sliced strawberries
Simply schmear peanut butter on one slice of bagel, the cream cheese on the other and place the sliced strawberries in between.
